Ingredients

2 sheets refrigerated pie crust

7 links breakfast sausage

1/2 white onion, finely diced

1/2 teaspoon oil

3 eggs

1/2 cup milk

1/2 cup grated cheddar

1/2 teaspoon dried parsley

1/2 teaspoon salt

1 teaspoon pepper

Directions

Cook the sausage separately according to the package instructions.

Once the sausage has cooled for a few minutes, dice it finely.

Cook the onion over a medium heat with oil until the onion is softened, approximately 5 minutes.

Allow to cool a little.

Mix the sausage and onion together with the eggs, milk, cheese, parsley, salt, and pepper.

Lightly grease two jumbo muffin pans.

Using a 4" circle cutter cut 4 circles from each pastry sheet.

Re-roll the trimmings from the pie crust and cut more circles until you have another 4. You may need to re-roll several times.

Use the dough circles to line the muffin pans.

Fill each dough cup completely with the egg and sausage mix.

Bake in a 350 degree oven for 21 minutes (or until puffed, golden and set).
